Red Jalapeño (2,500 to 8,000 SHU) – Perhaps the most famous hot pepper in the world, the Jalapeño is honored in Mexican cuisine both for its use fresh and smoked. Originally named for Xalapa, Veracruz where it was discovered in Mexico. Usually Jalapeños are harvested green to be eaten fresh and red to be dried or smoked. Scars or blisters on the skin of Jalapeños can indicate more heat than on smoother fruit. Our Jalapeños are harvested red and then dried.
Aleppo Pepper - (8,000-10,000 SHU) The Aleppo Pepper comes from the region around the city of Aleppo in modern-day Syria. It is a staple of Mediterranean and Middle Eastern cuisine, particularly in Armenia, Lebanon, and Syria. It is known for its fruitiness, mild cumin flavor, and sun-dried tomato tang under a wave of heat that builds after the initial taste. It is one of our favorite peppers and one of the hardest to find which makes them even more precious. Often they are crushed into Haleb Biber flakes and sometimes mixed with other spices like Sumac and/or salt.
Guajillo (2,000-5,000 SHU) The Guajillo pepper is the dried Mirasol variety traditionally from southern Mexico. They are a classic ingredient in mole sauces and a staple of Mexican cuisine. They have subtle smokiness (though these are not smoked) complimented by a fruit forward flavor and hint of spice. These are not as hot as the similar but smaller and hotter Puya variety (that we also love), but still can make for a spicy meal especially when used in larger quantities to build up heat.
