Smoking peppers is the best part of growing hot peppers. We take the art of smoked peppers very seriously and are always trying to improve our craft. We start with ripe, fresh peppers harvested from the field and put them through a slow smoke in our smokehouse, before finishing them in the sun. We use organic apple and pear wood for most of our smoked peppers and have been experimenting with plum, apricot, and cherry wood. Every variety of pepper is different, some are smoked over the course of a few days and others finish in a few hours. We always sun-cure our smoked peppers in the hot California sun after they leave the smokehouse.
